I love a healthy twist on a traditional recipe so last night I decided to health embrace a typical rhubarb crumble. I made it gluten, dairy & refined sugar free & it only took about 10 minutes to make. Always a bonus. Bee pollen & a little xylitol worked as a great replacement for white sugar with the rhubarb. I then mixed up oats. maple syrup & coconut oil in a pan for a quick topping.
